strawberry, habanero, madame jeanet mead

Have a good fermenting temp at home so started with this brew :)

recipe:

2 kg strawberries
1.8 kg honey
1 habanero
1 madame jeanet
1 tsp citric acid
1 tsp yeast nutrient
1 tsp rohment-p
1 tsp pectine

Cleaned and cut up the strawberries and put them in a big pot

added a cup of water and slowly warmed and mashed all the strawberries

then cut up half the chilies (with rubber gloves) and added them to my strawberry mash

added the honey to the strawberry mash stirred all the honey in the strawberries and then it was time to put it in the dj. The mash was a bit thick so had to use a chopstick to get it all trough.

put in the yeast, rohment-p, citric acid, yeast nutrient and mead yeast into the bottle. I did not have any pectine at home so have put an order in for that, i dont have a brewshop nearby so had to order this online. Kept a lot of headspace before I have my pectine. There is still a lot of fruit in there that will try and leave the bottle somehow.

Here the bottle is in a big pot in case of a strawberry vulcano :).

it has a nice dark red colour and there is a lot of white strawberries on the top. The rohment realy does its work :)

That looks like it's going to turn out brilliant. Are you not worried about wild yeasts though? Most people extract all the juice from the strawberrys separately from the primary :)

Also, what's "rohment-p"? I've never heard of it before and google doesn't find anything on it :)

I washed the strawberries first so should have lost the wild yeasts :P.. But there is a chance that the wild yeast takes over but or has influence on the brew but will see how it goes. its bubbling slowly now so will see how this will turn out. I am more afraid of the chillies added. At first i would have put in whole chillies and cook them in the strawberry jam but decided to get small piecies in and they can still make it very hot. But will have a taste in a few months and dont add anything to the secondary.

Rohament P is an enzyme that softens hard fruit and extracts extra colour and aroma from the fruit.

I think its almost the same but i think pectine is more for soft fruits and Rohament for harder fruits. I think I got them both in my starters cider making kit. I will read both labels tonight to see if i can find a difference.

Ok just asked my friend google and found the following. Rohament breaks down the cell walls of the fruit and pectine-enzyme breaks down the pectine and starch of the fruit.

Having some laptop problems and had to send it back so have to do without a computer at home.. But racked this weekend and got rid of all the small pieces of strawberry..

Had a bit of a taste and it tasted great.. It tastes amazing, its quite sweet (duh its honey with strawberry) with a little heat at the back.. first getting the sweet honey and strawberry and then a little bit of heat of the chillies at the end. The level of heat gives just a little kick and is cooled down by the sweetnes at the beginning..

I think this will be a winner and will call it strawberry surprise :)
